One of my ultimate comfort foods is a whole roasted chicken. It’s not only an affordable way to feed your family, it’s a delicious way! I have gathered together some of my very favorite ways to whole roast a  whole chicken. I absolutely LOVE potatoes! Maybe it’s because I was born and raised in Idaho. Most of my favorite side dishes, breakfasts, and soups feature some type of potato. This time of year is a bit gloomy, rainy, and cold here in Oregon, which always makes me want to make a big pot of soup. Potatoes are a wonderful addition to many soups because they make them thicker, creamier, and heartier. We eat a lot of Mediterranean dishes in my family. We especially love the briny flavors of olives, capers, and the tangy creaminess of feta cheese. Some of our favorite recipes that are super simple to make are Baked Mediterranean Chicken Breasts with Tomatoes, Olives, Capers, and Garlic, Heirloom Tomato Greek Salad,and Chicken Gyros with Tzatziki Sauce. We love celebrating St. Patrick’s Day in my house. What’s not to love – an evening filled with tasty food while spending time with friends and family. I love Mexican food – what’s not to love? Vibrant colored food with a ton of flavor that is fairly quick and easy to make.
